Seems that I learn a little bit with each batch of tomato sauce that I make. How long to blanch the tomatoes for (not as long as I thought) & waiting for the tomatoes to cool off (longer than I expected) have been two of the more important lessons.
The sauce cooks for about 15-20 hours in the crock pot & then is ladled into plastic containers which are then frozen. I have enough tomatoes for one more batch which works out well because we have friends coming in for the weekend.
Of course with handling tomatoes for two days & the smell of sauce cooking in the house around the clock, I have stopped eating tomato sandwiches. LOL
