Today was a 50/50 type of day.
Spring fever ravished me in the morning and I got basically nothing done. Well, I sat in the sunshine and read, took a little nap after getting up very early, and some other little piddly things so maybe "nothing" is not the right word. hehe
This afternoon, I tried to make up for my lazy morning by taking advantage of the 60 degree weather. Tucker got a bath outside (where he behaves much better than in the bathtub), washed most of the dog beds, cleaned up a bit more around the detached garage (including hauling some of the ex's junk out of the woods), burned a huge piles of leaves and sticks and then made myself a yummy dinner.
Not-Shepard's Pie
Brown ground meat (I used venison this time).
Toss in one chopped onion while meat is browning.
When about halfway cooked, toss in a bag of mixed vegetables, 1 can of condensed cheese soup, half a can of milk, half a can of white wine and season to taste.
Cover and let simmer.
While the meat mixture is simmering, prepare brown rice.
Pour meat mixture into greased casserole dish.
Cover with shredded cheese. (I used a Mexican blend)
Spread brown rice on top of cheese and sprinkle a bit of Parmesan on top.
Bake at 350 degrees (cover the pan with foil) for an hour or so - removing foil for the last 15-20 minutes.
ENJOY!
I did learn that grass seed that has fermented will make a small popping sound when thrown in a pile of burning leaves. Very amusing.
My attorney wrote to inform me that everything is in the other lawyer's court. Once again the waiting game is on. The ex - who just yesterday announced that he was still living here - has not showed up yet tonight. /shrug
Treadmill = zero (walked Tucker a short bit and did yard work instead)
