After waking up at 6 am, I decided to stay up & have a productive morning. So far I have worked on laundry, finishing up putting away the Christmas stuff, put away dishes, went through some mail & paperwork, ran the dishwasher, took out garbage, did some software maintenance on both of my PCs & made a yummy quiche.
The quiche?
A crustless cheeseburger quiche made with the fresh eggs we bought home yesterday. It turned out awesome!
Recipe:
Brown 1/2 lb ground beef (I used our black Angus, but any ground meat would work just fine)
3/4 cup of heavy cream
6 eggs

- Put eggs & cream in blender, add salt, pepper & onion powder to taste. Blend to a smooth mixture.
- Add shredded cheese to suit.
- Pour egg mixture into greased 13x13 baking dish.
- Add ground beef
- Bake in a pre-heated 350 degree oven until done. (I tent the dish with foil so avoid overbrowning & add some extra shredded cheese when i remove the foil to finish the quiche.)
