And away we go!
September 8th, 2012 10:49 pmTonight has been spent packing for our OBX vacation.
daecabhir cooked a very yummy meal for us while I cut chicken for the meal that we will prepare at the beach (stir fry). This year the group will consist of at least half new folks so there will be many new faces and names. The house we are renting is a different one from last year (thank goodness!) but still on the 4x4 beach in Corova.
Yesterday I picked all the figs that were ripe from our fig bush (it's really not a tree even though I call it one most times) and when I was done, I had filled up our largest collander. After perusing many recipes, I settled on making a fig cake and a batch of fig bars. Just over four cups of figs were simmered down into a paste for the bars and the balance was used the cake. Sadly, the cake turned out horribly (not cake-like at all and only the outside set-up. After spreading it out on a cookie sheet, we re-baked it and the result looks horrible but tastes okay. The bars are very gooey but quite delicious. I hope Grandma would be proud; if nothing else she would probably laugh at me not being able to eat all the ripe figs. Our tree (see, there I go again) it a descendant of her trees and eating the figs always makes me think of her.
And just because I have not mentioned it here in a while - I adore my husband. He never ceases to amaze me - from seemingly silly little things like refilling the Q-tip container to (in my mind) big things, such as fetching the car in the rain so I wouldn't get soaked. He is thoughtful, a great listener and gives wonderful hugs.
And he puts up with me!
